It’s not hard to see how the humble hamburger became summer’s ultimate comfort food. With minimal effort (and ingredients), you can cook a patty that’s immeasurably better than drive-through fare. Try one of these homemade gourmet burgers this weekend.

Salmon Burger With Grilled Romaine Heart + Lemon Yoghurt Sauce

What You Need

340g salmon fillet
1 tsp fresh rosemary, finely chopped
⅓ cup panko (Japanese breadcrumbs available at speciality Asian food shops; you can use normal breadcrumbs but the result won’t be as crisp)
1 egg white
2 tsp lemon zest

Method

1/ Cut salmon into pieces and blend in a food processor for one minute. Combine in a medium bowl with remaining ingredients and form into four patties.
2/ Braai for four to five minutes, flip, then braai for another four to five minutes. Top each patty with one-eighth grilled romaine heart and two tablespoons lemon yoghurt.

SERVES 4. Per serving: 690kJ, 6g fat (1g sat), 6g carbs, 295mg sodium, 1g fibre, 21g protein

Turkey+ Grilled Peaches

What You Need

340g ground turkey
2 tbsp Dijon mustard
2 tbsp shallot, finely minced
2 tbsp fresh parsley, chopped

Method

1/ Combine all ingredients in a medium bowl and form into four patties. Braai for five to six minutes, then flip and braai for another five to six minutes, or until burgers reach an internal temperature of 75°C.
2/ To serve, top each patty with half a sliced grilled peach.

SERVES 4. Per serving: 710kJ, 9g fat (2g sat), 8g carbs, 240mg sodium, 1g fibre, 17g protein

Ostrich Burger + Grilled Guacamole

What You Need

340g ostrich mince
½ cup onion, chopped
½ tsp garlic powder
¼ tsp paprika

What You Need

1/ Combine all ingredients in a medium bowl and form into four patties. Braai for five to six minutes, then flip and braai for another five to six minutes, or until burgers reach an internal temperature of 70°C.
2/ To serve, top each patty with two tablespoons grilled guacamole.

SERVES 4. Per serving: 528kJ, 4g fat (1.4g sat), 3g carbs, 200mg sodium, 3g fibre, 18g protein
