Seared Beef Fillet with Pomegranate

Try this beef fillet recipe packed with youth-boosting antioxidants…

What You Need

Knob of butter
1 small beef fillet
Salt and freshly
ground black pepper
60ml red wine
250ml beef stock
1 punnet pomegranate seeds
Handful chopped fresh mint
½ red onion, finely sliced


Preheat oven to 200˚C. Heat a frying pan with butter until just beginning to brown. Sear fillet until browned on all sides; remove and place on baking tray. Cook in the preheated oven for about 15 minutes or until desired doneness. Heat the same pan and deglaze with red wine; add stock and allow liquid to reduce by half. Season. Remove fillet from oven; allow to stand for 10 minutes, then slice. Place on a serving platter, pour over the sauce and top with pomegranate seeds, fresh mint and onion.
