Chopped Salad

Ingredients
  

  • A good chunk of red or green cabbage, thinly sliced
  • 2 carrots grated
  • 1 red or yellow pepper
  • 1/2 red onion finely chopped
  • handful coriander roughly chopped
  • 1 medium-hot chilli finely chopped
  • 1/2 cup nuts chopped and toasted
  • 2 tbsp white sesame seeds toasted

For the dressing

  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • Agave syrup to taste
  • 1 tsp wholegrain mustard
  • salt and pepper to taste
  • 2 tbsp apple cider vinegar

Instructions
 

  • Mix all the salad ingredients in a large bowl.
  • Place all the dressing ingredients in a Consol jar and shake to combine.
  • Pour the dressing over the salad and mix well to combine. Taste and adjust seasoning as necessary.
