Fried rice with tofu and vegetables

Ingredients
  

  • 1 tbsp sesame oil
  • ½ cup diced onion
  • ½ cup sliced celery
  • ½ cup quartered and sliced carrots
  • 1 cup crumbled tofu
  • 2 cups cooked brown rice
  • 1 tbsp water
  • 1 tbsp soya sauce
  • chopped parsley for garnish

Instructions
 

  • Heat the oil in a frying pan.
  • Add the onion, celery, and carrot and sauté for 2 minutes.
  • Stir in the crumbled tofu.
  • Layer the rice over the vegetable and tofu mixture and pour the water down the side of the pan.
  • Cover and cook on low heat for 5 minutes.
  • Stir in the soy sauce and cook for a further 2 minutes.
  • Garnish each serving of fried rice with chopped parsley.
