Blackberry-Mango Smoothie Bowls With Barberries

This smoothie bowl is a healthy, antioxidant-packed breakfast that’s creamy, colourful and easy to make.

Equipment

  • 1 Blender

Ingredients
  

  • 2 Tbsp dried barberries
  • 1 cup frozen chopped mango
  • 1 cup frozen blackberries
  • 2 Tbsp ground chia seeds
  • 2 Tbsp almond butter
  • ¾ cup unsweetened

    soya milk

  • ½ cup mashed cooked sweet potato
  • 1 tsp ground turmeric
  • 1 tsp pure vanilla extract

Instructions
 

  • In a small bowl, combine the barberries with enough water to cover. Set aside to allow the barberries to plump up, about 10 minutes.
  • In a blender, combine the mango, blackberries, chia seed, almond butter and soya milk, and blend until smooth. Add the sweet potato, turmeric and vanilla, then blend again until smooth and creamy. If the mixture is too thick, add a little extra soya milk or water.
  • Transfer the smoothie into two bowls. Drain the barberries and spoon them decoratively on top of the smoothie bowls. Add your choice of additional optional toppings (if using) and serve immediately.

Notes

Optional toppings may include fresh berries, ground flaxseeds, hemp seeds, goji berries, sunflower seeds or cacao nibs.
