Courgette And Feta Frittata

- 6 Eggs
- 2 Zucchinis
- 80g Feta crumbled
- 3 tbsp Milk
- 12 Sprigs flat-leaf parsley, chopped chopped
- 1 Onion chopped
Preheat the air fryer to 180°C.
Chop the courgettes into cubes (cutting some into five or six thin slices for the top of the frittata). Brown the cubed courgette with the onion in the air fryer for 5 minutes.
Mix the eggs, feta, milk and half the parsley in a bowl.
Add the mixture to a flan dish or shallow cake tin with the vegetables. Cook in the air fryer for a further 15 minutes.
Garnish the frittata with the remaining parsley before serving.
