Homemade Breakfast Granola

This recipe only takes 15 minutes to make, and is packed with all the good stuff – coconut, nuts, seeds, spices and ginger.

Ingredients
  

  • 2 tbsp freshly grated ginger
  • cup desiccated coconut
  • cup coconut flakes
  • 1 cup macadamia nuts chopped
  • cup almonds chopped
  • cup pumpkin seeds
  • 10 medjool dates chopped
  • Pinch ground cinnamon
  • Pinch ground nutmeg
  • ½ cup coconut oil

Instructions
 

  • Preheat oven to 180°C.
  • Mix all the ingredients together in a large bowl, making sure that the coconut oil coats evenly.
  • Spread the mixture onto a parchment-paper-lined baking tray and bake for 15 minutes, or until golden brown. Cool, then pop this mixture into a large sealable container, or divide into five zip-lock bags. Breakfast sorted for the week? You glow girl!
