*To make the green curry paste, blend:
- 5 garlic cloves
- 3-5 jalapeños (Thai chillies or Serrano peppers)
- 4 shallots
- 2 Thai lime leaves
- 2 lemongrass stalks
- 60g fresh coriander
- 60g fresh basil
- 2 tablespoon grated ginger
- 2 tablespoon tamari
- 2 limes squeezed
- 1 tsp sea salt
- 1 tsp ground cumin
- 1/2 tsp ground coriander
