Healthy Chocolate Mousse

- 1 Blender
- 1 Saucepan
Ingredients
- 300g butternut squash, roughly chopped
- 150g dark chocolate, melted
Instructions
- In a medium saucepan, add the butternut squash and cover with water. Place over a medium heat and simmer for 10 minutes or until tender and cooked through. Drain and leave the excess water to evaporate for 5 minutes.
- Add the butternut squash to a blender along with the melted chocolate, blitz until smooth.
