It’s all about the avo…
Avocados are oh-so good for you. Add them to these tapas dishes – you’ll impress guests at any party, and a couple of them will work really well in your lunchbox or as an afternoon snack too.
1. Mini pitas with lime grilled chicken, avo and sweetcorn
Shred chicken breasts, toss with diced spring onion, coriander, red pepper and sweetcorn. Dice avocado, toss in a few teaspoons of lime juice and season with salt and pepper. Stuff mini pitas and serve.
2. Crostini with spiced beef strips, avo and peppadews
Rub strips of beef with chermoula paste, flash fry, top crostini (toasted French loaf rounds) with diced avocado and peppadews, garnish with fresh coriander.
3. Avo and proscuitto platter
Peel and slice avocados, arrange on a platter with slices of proscuitto, drizzle with balsamic reduction, garnish with rocket leaves and parmesan shavings.
4. Avo and carpaccio platter
Peel and slice an avocado, wrap each slice with a piece of sundried tomato and a slice of Carpaccio. Drizzle with garlic avocado oil, and serve with freshly ground black pepper.
5. Avo, tomato and haloumi skewers
Skewer cherry tomato halves with diced avocado, a block of haloumi cheese and a basil leaf for a quick and healthy canapé. Serve drizzled with fresh pesto or balsamic vinegar.
6. Avo and turkey on cucumber
Slice an English cucumber into 15mm rounds, top with mashed avocado, smoked shaved turkey, and a teaspoon of cranberry sauce. Garnish with chives for a stylish and glamorous low fat canapé.
