Every busy girl needs an easy omelette recipe that they can bust out in a time crunch. This quick recipe is super-charged with greens like kale, spinach, avocado and herbs so that you can get a healthy boost for your day ahead. Start your day the right way with this omelette that’ll leave you wanting more.
– 1 tsp coconut oil
– 1⁄2 onion, chopped
– 2 cloves garlic, crushed
– 1⁄2 red chilli, sliced thinly
– 1 handful chopped kale
– 1 handful chopped spinach
– 1 tsp ground coriander
– 1 chopped avocado
– 1 tbsp tahini
– 1 bunch fresh parsley, chopped
– 4 eggs, whisked
1/ Melt the coconut oil in a saucepan, then sauté the onion, garlic and chilli for five to 10 minutes. Add the kale, spinach, coriander, avocado, tahini and parsley; stir and season well.
2/ Pour the whisked eggs over the vegetables, put a lid on it and cook for five minutes. Plate up or eat your omelette straight from the pan.
