Food Ed Amy Rankin partnered up with Wazoogles Superfood to create nutrient-packed oh so good for you chocolate brownies – all dairy-free, sugar-free and gluten-free…

Wazoogles Chocolate Moondust Organic Superfood Protein Blend is vegan-friendly, sugar-free, dairy-free and gluten-free, with zero preservatives, colourants and flavourants. Basically, all-natural, raw, superfoods! Packed with plant protein, the powdered mixture consists of heirloom cacao, chia seeds, hemp protein powder, maca root, wild-harvested mesquite, lucuma fruit and pea protein.

Here’s how she made these amazing brownies…

What You Need

200g raw cacao powder
300g coconut oil, melted
100g ground almonds (almond flour)
100g almond flakes (or chopped almonds)
½ cup Wazoogles Chocolate Moondust Organic Superfood Protein Blend
¼ cup raw cacao nibs
¼ cup desiccated coconut
¼ cup macadamia nut butter (try ButtaNutt’s 100% roasted macadamia butter)
1 cup dates (pitted)
6 eggs

Method

1/ Combine the raw cacao powder and coconut oil until smooth.
2/ Mix in the ground almonds, almond flakes, Wazoogles Chocolate Moondust, cacao nibs, desiccated coconut and nut butter.
3/ Place the dates in a saucepan with a little water and stew to soften, then blend into a purée with a hand-held blender. Set aside to cool slightly.
4/ In a separate bowl, beat the eggs until light, fluffy and pale in colour.
5/ Mix the date purée into the cacao mixture until well-combined.
6/ Gently fold in the eggs.
7/ Grease two square containers with a little coconut oil, pour in the brownie mixture and make sure it’s evenly distributed.
8/ Bake at 160 degrees Celsius for 10 minutes. Remove and allow to cool in the tin, then slice into small squares. The brownies will be quite soft and moist (and very rich). If you prefer ‘drier’ brownies, cook for a further five minutes.
