Fruit and yoghurt isn’t very enticing on a coldish morning, but grilling bananas until they caramelise creates the ideal contrast of comforting hot, rich sweetness against tart granadilla and cold, creamy yoghurt.
What You Need
2 bananas, split
¼ cup freshly squeezed orange juice
2 tsp honey
To serve:
2 granadillas
Greek-style yoghurt
Method
1/ Preheat the grill. Arrange the bananas in a shallow ovenproof dish, cut-side facing up. Pour over the orange juice and smear the cut sides with honey.
2/ Place directly under the grill, as close to the heat as possible, and grill for five to six minutes or until golden.
3/ Divide the bananas and orange juice between two bowls, scoop the granadilla pulp over or around the bananas and serve with a dollop of Greek-style yoghurt. Alternatively, fold the granadilla pulp through the yoghurt and serve the bananas and orange juice on top.
