Dessert for breakfast? Sure, why not.
If you feel like you’re stuck in a bit of a breakfast rut with your oats, then you definitely need to try this chia chocolate pudding. Besides literally tasting like a decadent pudding (yup) this chia seed recipe actually contain more fibre than your usual go-to breakfast bowl, which means you’ll end up feeling fuller for longer. And FYI… it only takes three minutes to prep!
Chia Chocolate Pudding
Ingredients
– 4 tbsp chia seeds
– 2 tbsp coconut yoghurt
– 250ml coconut milk
– 1 vanilla pod
– 1 tsp cacao
– 1 tsp desiccated coconut
– Handful mixed berries
Method
1. Place the chia seeds, yoghurt and milk in a jar, scrape the beans out of the vanilla pod and add to the jar with the cacao. Seal and refrigerate overnight.
2. In the morning, sprinkle the coconut on the top and add the berries.
SERVES 1. Per serving: 2 115kJ, 15g sat fat, 13g sugar
